Anyone know how to add photos to an album on mobile? I don't see the option to post to an album when I'm about to post a pic.

when you add an image, select multiple or a single picture using the photos app on your phone that pops up when you tap on the image icon, and after you got your images, there is a green create album button and name it to what ever you want

You can add photos to an album by clicking it, then going to its little drop down menu on the albums post!
