Let's get one thing out of the way... I don't consider myself to be vegetarian/vegan, but I do see how the overconsumption of meat is bad for the environment (the production of meat, specifically livestock farming, involves the release of greenhouse gasses, but I digress). I just wanted to say that I believe that the solution isn't simply not eating meat at all, rather the solution is trying to eat LESS meat. One thing my family started doing is eating plant-based meat (often marketed as either "beyond meat" or "impossible meat"). It has just as much protein as actual meat, because the protein is derived from chickpeas. My family tried making gochujang [spicy Korean barbecue meat] using plant-based meat, and the difference in taste and texture isn't even noticeable (at least that's how it is for me).
Edit: I forgot to mention that there are at least 15 different brands of plant-based meat in the United States
